On the day of the wedding they will be there to coordinate (hence the name) and to make sure everything runs smoothly. Often they also give you pointers on documents and possible venues and vendors if you hire them early on. Some wedding coordinators get involved only a month or even weeks before the wedding day, I personally prefer to talk to my couples here are there during the process from the beginning to make sure everything is going well.
